Gingerbread for Jessica...

Since my girlfriend Jessica asked for my gingerbread recipe after checking out my breakfast bake, I figured I'd share it with all of you!

I got the recipe from Better Homes and Gardens: New Cookbook.  It was one the first cookbooks that I ever bought, and this recipe is really great- so long as you don't overwork your dough.  I made the mistake of thinking I could make this and keep Laela from climbing the walls, tables, etc, and it just wasn't a good idea.  I wound up running around while letting the dough mix itself into a tizzy.  My advice?  Make this recipe, it's super easy- so long as you're not super distracted.  (FYI, it came out perfect when I tried it again during Laela's naptime!)

Gingerbread

You'll need:
  • 1 1/2 cups all-purpose flour
  • 3/4 tsp ground cinnamon
  • 3/4 tsp ground ginger
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup shortening
  • 1/4 cup packed brown sugar
  • 1 egg
  • 1/2 cup mild flavored molasses
Instructions:
  • Grease a 9x1 1/2 inch round cake pan; set aside.  In a bowl stir together flour, cinnamon, ginger, baking powder, and baking soda; set aside.
  • In a large mixing bowl, beat shortening with an electric mixer on medium speed for 30 seconds.  Add brown sugar, beat until fluffy.  Add egg and molasses, beat 1 minute.  Alternately add flour mixture and 1/2 cup water to shortening mixture, beating on low speed after each addition until combined.  Pour batter into prepeared pan.
  • Bake in a 350-degree oven for 35 to 40 minute or until a wooden toothpick comes out clean.  Cool for 30 minutes in pan on wire rack.  Serve warm.

Nigella's Caramel Croissant Pudding

I don't know about you, but I absolutely love breakfast.  When I came across this Nigella's Express recipe with stale croissants, caramel and custard, well, I have to say I swooned.  While I'm not normally a sweets person, especially not for breakfast, I love caramel, and I just knew Kyle and Laela would really enjoy it.  After all, does Nigella ever share bad recipes?  I think not.

I'm going to warn you.  This is one seriously decadent breakfast, and I'm pretty sure it's in NO way healthy.  But it's totally worth the indulgence.

Nigella's Caramel Croissant Pudding

Ingredients:
  • 2 stale croissants
  • 1 cup sugar
  • 2 tablespoons water
  • 1/2 cup heavy cream
  • 1/2 cup whole milk
  • 2 tablespoons bourbon
  • 2 eggs, beaten
Instructions:
  • Preheat the oven to 350- degrees.
  • Tear the croissants into pieces and put ina  small gratin dish; I use a cast-iron oval one with a capacity of about 2 cups for this.
  • Put the sugar and water into a saucepan, and swirl around to help desolve teh sugar before putting the saucepan on the burner over medium high heat.
  • Carmelize the sugar and water mixture by letting it bubble away until it al turns a deep amber color; this will take 3-5 minutes.  Keep looking, but don't be too timid.
  • Turn the heat down to low and add the cream- ignoring all spluttering- and, whisking, the mnilk and bourbon.  Any solid toffee that forms in the pan will dissolve easily if you keep whisking over low heat.  Take off the heat, and still whisking, add the beaten eggs.  Pour the caramel bourbon custard over the croissants and leave to steep for 10 minutes if the croissants are very stale.
  • Place in preheated oven for 20 minutes and prepare to swoon.
Nigella says this serves 2 greedy people, but I think it could serve 4 with a salad, since it's so rich.

Oatmeal Crumble with a Side of Missing Dada

It's been a difficult week.  Kyle's in London for two weeks, and while it's hard for me because I miss him, it's particularly hard for the tiny human running around the house.  She looked at me earlier in the week, grabbed me by the cheeks and said "Mama?"  "Where Dada?"  It was like she has been trying to figure out how to ask this all week, and finally found her words.  What's worse, is that instead of being consumed with the normal pride I feel when she learns a new word or phrase, I wanted to cry.

Instead, I made her an ice cream sundae.  I know.  Shoot me.  I fed my kid one scoop of vanilla ice cream topped with homemade oatmeal crumble and cinnamon sprinkled on top.  But what else was I supposed to do?

I think people that don't have kids really don't understand how difficult it is to parent alone.  They don't realize that it's exhausting to always be emotionally and physically "on"- which would be why so many people that Ky and I know that don't have kids or never had a traveling parent, think it's so cool that he's traveling so much lately.  They also don't think about the fact that there's a little person who loves their Dad and depends on his being there.  They just think about the glamour, which in reality isn't so glamourous.

I'm starting to realize that there are some dividing lines among friends that are single and married.  Single people get sick of being asked when they're going to get married and have children and "grow up".  Maybe they don't want to get married.  Maybe they already feel like they're grown up.  Or maybe they do want to get married, but the idea of children seems like the black plague to them.

Married people get sick of being asked when they're going to have kids, or if they already have one, when they're going to have one more, two more, five more.  Maybe they don't want children, or they only want one.  Maybe they need to wait to have another baby.  Maybe all of these decisions, wait for it, are private decisions that people need to stop asking about. 

At the end of the day, a lot of these issues are no one's business.  You never know what it's like to walk in someone else's head, or marriage, or life- sometimes even when you try.  Learning this through my friendships and relationships has really helped me with parenting...it's given me the ability to admit that sometimes I just don't know what to do.  When Laela misses her Daddy, I just don't know what to do.  So I keep her on schedule, I take her on toddler adventures to museums and playgrounds, and we paint, sing, laugh and play.  I do my best to make her realize that Momma's not going anywhere, and that when Dada's gone it means fun, not just missing Dada.

Dada is not going to stop traveling anytime soon, so if it means my kid has a few sundaes here and there, well, I guess that's how it's going to be.

So make yourself a sundae.  And if you're feeling crunchy, try this yummo oatmeal crunch to top your yogurt, ice cream, or fruit.

Oatmeal Crumble

For this recipe you're just going to eye it up. 
Put some brown sugar (a tablespoon or two), a few good shakes of cinnamon, a big handful of oatmeal, and a tablespoon or two of butter and mix together.  when it all sticks together well, put it in the oven at 350-degrees, cook it for ten minutes, or until golden brown. 
You can store any leftover in an air tight container for about a week and a half.
*If you're a nut lover, feel free to add some chopped/crushed/or halved nuts to the crumble before you bake!

In Case You Were Wondering...

I've been a very busy lady!  Here are some of the yummy things I"ve made lately.

Homemade honey wheat bread:




I have a newfound respect for people that make bread from scratch for a living.  Kneading for ten minutes!  For two loaves of bread!  My arms felt like jelly afterwards!  But you know what?  It's the best wheat bread I've ever had, and I think I'm going to make bread every week now.  Buff arms here I come!  (Oh wait, I carry around a 30-pound toddler...already have those...well, a little extra never hurt!)

Last Friday, my best friend Juice needed 24 creme brulees for his dance instructor's birthday party.  I topped them with homemade whipped cream and served them with a side of sugar-crusted mango tossed in lemon juice.  I forgot to get a photo of the mango salad...but here are some photos of the creme brulees:





I made some steamed sweet potato slices as a side for dinner the other night.  I melted some butter, brown sugar and cinnamon in a ramekin and drizzled it over the sweet potatoes.  Yum!



Last Saturday I whipped up some killer breakfast sandwiches.  I toasted my homemade honey wheat bread and filled them with simple cheesy scrambled eggs and crispy bacon.



Lastly, here's a cake I made for my Daddy.  He's officially a pilot!


The cake was 2 layers of chocolate and one layer of vanilla, filled and iced with vanilla buttercream, and topped with my favorite candy from Canada, Coffee Crisp!
